At present, the output of municipal solid waste in China is increasing, of which kitchen waste accounts for 60%. So as to reasonably improve the utilization rate of kitchen waste, starch kitchen waste-potato was used as fermentation substrate to test its hydrogen production characteristics. Potato in kitchen waste of a university in Henan province was selected as raw material, HAU-M1 was used as photo fermentation hydrogen production bacteria, under the condition of initial pH 7, α-amylase and Glucoamylase were added, and synchronous saccharification method was used to carry out hydrogen production experiment with 3 g, 6 g, 9 g, 12 g, 15 g as substrate concentration gradient. The hydrogen yield, pH value, redox potential and reducing sugar concentration were measured and plotted every 12 hours. The results showed that when 9 g potato was used as substrate, the maximum hydrogen production rate was 16.21 mL / h at 60 h, the highest hydrogen production was 491.72 mL, the pH value increased to 7.04 and then decreased gradually to 5.4, the redox potential was stable after 72 h, and the concentration of reducing sugar increased at first and then decreased slowly, which indicated that potatoes had good hydrogen production characteristics under acidic conditions.
