Abstract
In this paper, it researched that different pretreatments were used to promote the hydrolysis of food waste and enhance the accumulation of lactic acid by open fermentation. The results of different pretreatments promoted food waste hydrolysis showed that acid-ultrasonic pretreatment released the soluble components of fermentation substrate to the maximum extent, while acid ultrasonic double enzyme pretreatment produced the highest glucose concentration. In the open fermentation, the highest concentration of lactic acid was 46.67 g/L, was 1.72 times higher than control group, and its conversion rate of lactic acid was 70.88%. This experiment suggested that acid-ultrasonic pretreatment can effectively promote the cumulative concentration of lactic acid in open fermentation, and it was relatively efficient and more economical. At the same time, the goal of harmless and resourceful food waste has been achieved. It provides a new way of thinking for the treatment of food waste and the preparation of lactic acid.
